Monday – Chicken Noodles
I’ll be making leftover roast chicken with loads of stir fried veggies tossed through noodles with hoisin sauce. Quick, easy and delicious.
Tuesday – Pasta with Broads Beans
I’ll be cooking up fresh tagliatelle and tossing through garlicky double podded broad beans and sprinkling over crumbled feta cheese and freshly chopped mint. Another quick and easy dinner.
Wednesday – Aubergine and Tomato Pasta
I love this dish – it’s quick, easy and vegan – I’m trying to eat vegetarian and vegan food a few times a week and this is just such a tasty recipe and one the kids love to. Get the Vegan Aubergine and Tomato Pasta Recipe here.
Thursday – Leek and Feta Tart
Another super easy recipe – this vegetarian tart is great for midweek dinner – easy to make and delicious to eat. I usually add a green salad, maybe a potato salad too depending on how hungry everyone is. Get the Leek & Feta Tart Recipe here.
Friday – Prawn Pasta
Quick and easy spicy prawn spaghetti – perfect for Friday night, I’ll add a side salad and maybe start with some quick little bruschetta. Get the Spicy Prawn Spaghetti Recipe here.
Saturday – Wood Fired Pizza
It’s ages since we got the pizza oven out so hopefully it’ll be a dry night and we can cook up some pizzas in the garden.
Sunday – Roast Chicken Salad
I’ll be cooking roast chicken stuffed with garlic and herbs so it tastes amazing. I’ll serve with potato salad and a green salad.
