Weekly Meal Plan
Monday – Bubble & Squeak
I’ll be making bubble & squeak using leftover roast potatoes, mashed potatoes and green veggies from yesterday’s roast dinner – I’ll top it with poached or fried eggs.
Tuesday – Homemade Pesto & Pasta
I’ll be making a simple basil pesto in the food processor and serving tossed through spaghetti with sun dried tomatoes. Get the homemade pesto recipe here.
Wednesday – Warm Chicken & Chorizo Salad
I miss salad in the winter so I’ll be making a roast vegetable and bean salad – tossing in homemade Italian salad dressing and serving with sliced chicken breast and chorizo – I’ll add some rocket too for added peppery flavour.
Thursday – Slowly Cooked Ragu
I made the steak ragu last week and made way to much of it so tonight is an easy dinner – warming up the ragu sauce from the freezer and serving with fresh tagliatelle.
Friday – Homemade Burgers
It’s so quick to make beefburgers – I’m going to do Italian style – season the meat with oregano, thyme and garlic and serve topped with roast tomato chutney and mozzarella slices.
Saturday – Sticky Chinese Chilli Chicken
I’m making the sticky Chinese chilli chicken again this week because it was just so good! Way better than take-away and worth the effort! I’ll pop the recipe on the blog this week in case you need it in your life too!
Sunday – Homemade Gnocchi with Roast Vegetable Tomato Sauce
I’ve not made gnocchi for ages so I felt like making it – I’ll just do plain gnocchi with a lovely homemade roast vegetable sauce.
