WEEKLY MEAL PLAN

MONDAY – CHICKPEA CURRY 

Homemade vegan chickpea curry

I’ll be making a quick chickpea curry – our curry recipe is naturally vegan and ready in less than 30 minutes making it a great weeknight dinner.

I’ll serve with rice, naan breads and mango salsa.

TUESDAY – SPANISH CHICKEN STEW

I’ll be making a simple Spanish chicken stew – flavoured with chorizo and packed with extra veggies, I’ll serve with crusty bread on the side.

WEDNESDAY – STEAK & GUINNESS STEW

I’ll be using the slow cooker for this Steak & Guinness stew – packed with beef, root vegetables and cooked in a delicious rich Guinness flavoured gravy, I’ll serve with cheat-y Aunt Bessie dumplings and a pile of cheesy, creamy mashed potatoes.

Recipe for the stew will be up later in the week. 

THURSDAY – PASTA BOLOGNESE

Our oven baked bolognese sauce is just the BEST, oven baking gives it a really rich flavour.

I’ll serve with freshly cooked pasta and a side of green vegetables.

FRIDAY – FISH & CHIPS

Easy freezer dinner tonight – fish and chips with a side of mushy peas.

SATURDAY – VEGETARIAN FAJITAS

I’ll be cooking up vegetarian fajitas and wrapping up roast peppers, onions and sweet potatoes  with refried beans and cheese in warmed tortilla wraps.

SUNDAY – SLOW COOKER BRISKET & GRAVY

A super easy way to cook a ‘roast’ dinner – slowly cooking the brisket in the crockpot makes it super tender and as it cooks it makes delicious onion gravy.

I’ll serve with mashed potatoes, cheat-y Yorkshire puddings and vegetables.
