Monday – Sausage & Spinach Gnocchi
I’ll be making delicious gnocchi – crumble the sausage meat from the skins, fry with onions, pour on the tomatoes, add some herbs and simmer – stir in the freshly cooked gnocchi and serve with a side of garlic baguette. Delicious and easy! Recipe on the blog this week.
Tuesday – Chicken Fajita Pasta
I’ll be making a one-pan family pasta dish – filled with all the flavours of traditional fajitas but with pasta. I’ll serve with corn cobs and salad. Recipe on the blog this week.
Wednesday – Roast Chicken Salad
I’ll be making roast chicken and loads of salads – probably some oven baked wedges or herby diced potatoes to go alongside. Grab the Herby Diced Potato Recipe here.
Thursday – BLT Pasta Salad
I’ll be making a BLT pasta salad and adding in any leftover roast chicken from yesterday too – get the BLT Pasta Salad Recipe here. This is a really filling dinner so you probably won’t need any side dishes and leftovers taste great next day.
Friday – Roast Tomato Pasta

Saturday – Turkey Burgers
The kids love these turkey burgers and using turkey mince to make the burgers makes them healthy and lighter than beef burgers. Pack the buns with salad and serve with a side of sweet potato wedges for a great Saturday night dinner idea.
Sunday – Greek Lamb Stew
We LOVE this Greek lamb stew – even though it’s stew it’s light enough for summer and you can serve with either herby roast potatoes or couscous and salad. I’ll decide on the day depending on the good old British weather. Get the Greek Lamb Stew Recipe here.
