First meal plan of the year and I’m back to healthier food, and definitely more fruit and vegetables!
Weekly Meal Plan
Monday – Chickpea Curry
We love this easy vegan chickpea curry – it’s so quick to make, literally 20 minutes cooking time so it’s brilliant for busy weeknights. I usually add a side of mango salsa and some mint raita – if you’re sticking to strictly vegan you can make this using soya yogurt. Get the chickpea curry recipe here
Tuesday – Spicy Sausage Pasta
Another quick midweek dinner – easy to prep and easy to cook. Loaded with peppers and cherry tomatoes with a spicy little kick. This is always really popular with the kids too. Get the spicy sausage pasta recipe here.
Wednesday – Chicken Fried Rice
The recipe isn’t on the blog for this one yet – but it’s so easy – it’s just shredded chicken, peas and onions fried with rice and eggs – I like to add a generous squirt of hot chilli sauce to mine too. Quick and delicious.
Thursday – Sweet Potato Chilli (Ad feature recipe)
Our Chipotle sweet potato chilli recipe is super tasty – really easy to make and leftovers are good in thermos food pots next day. I usually serve this with cheesy nachos and either corn cobs or salad. Get the Sweet Potato Chilli Recipe here.
Friday – Homemade Pizza
We’ll be firing up the pizza oven in the garden and making homemade pizzas. I’ll probably top with goat cheese, figs and olives – maybe a little chilli jam.
Saturday – Spicy Lamb Flatbreads
I’ll be cooking up spicy lamb pittas but with a little twist – I’ll be adding in green lentils which just means eating a bit less meat but without compromising on taste. Grab the spicy lamb flatbread recipe here.
Sunday – Fish Tray Bake
I’ll be skipping the heavy roast dinner this week – we ate enough of them over Christmas – I’ll be cooking fish tray bake with lots of olives and tomatoes. I’ll serve with greens – broccoli and kale dressed in lemon and olive oil. Get the fish tray bake recipe here.
