This is definitely the last meal plan of the year… after this week I need to be free to just eat festive STUFF!
Weekly Meal Plan
Monday – sausage stew and mashed potatoes
I’ll be cooking up a really easy sausage stew and serving with garlicky mashed potatoes and peas. Grab the sausage stew recipe here.
Tuesday – oven baked bolognese
Baking bolognese pasta sauce in the oven is really worth the effort – it tastes amazing! I’ll serve with fresh spaghetti and a wintery spinach and beetroot salad. Get the bolognese recipe here.
Wednesday – cheat chicken curry
We love this cheat chicken curry – it’s basically just a pimped up jar of curry sauce, but all the extras make it taste a whole lot better. Get the cheat chicken curry recipe here.
Thursday – chilli con carne
Our mild chilli con carne is perfect for family dinner – it’s gently spiced and so suitable for young kids too. I’ll serve with rice, nachos, salad and homemade coleslaw. Get the mild chilli con carne recipe here.
Friday – gnocchi with roast veg sauce
A really easy dinner – gnocchi tossed with homemade roast veggie sauce and lots of Parmesan cheese. I make the sauce by roasting – herby peppers, courgettes, onions, tomatoes and fennel – then blitz a little in a blender – but keep it still chunky – then toss through the gnocchi.
Saturday – loaded fries
I’m blaming Instagram for this dinner…. I keep seeing loaded fries so I’m going to have to make some – I’m thinking load them with bacon bits, cheddar, spicy garlic mayo… I’ll decide nearer the time.
Sunday – puttanesca
We just can’t get enough of this pasta sauce! (I will put the recipe on this week) it’s a basic puttanesca sauce – tomatoes, capers, olives, garlic, anchovies, chillies but with a big splash of red wine. So good!
