Weekly Meal Plan
Monday – Roast Tomato Spaghetti
Delicious and super easy our roast tomato spaghetti will fast become a favourite!
I serve this with mozzarella, fresh basil and usually a side of garlic bread for the kids.
If I’m adding vegetables or salad I tend to go for either a green salad or a side of steamed broccoli.
Tuesday – Burgers and Fries

I’ll be cheating with this one and buying ready made burgers – loading them up with cheese, salad, pickles and tomato relish.
Adding a side of fries and onions rings and digging right in!
Wednesday – Pulled Chicken Tacos
I’ll be slow roasting chicken thighs in a spiced fresh tomato sauce – pulling the chicken and stirring it into the spicy tomato sauce – serving in tacos with soured cream, pickled red onions and freshly made guacamole.
Thursday – Sticky Chicken Noodles
I’ll be making sticky honey sesame chicken pieces in the slow cooker then tossing them through egg noodles and stir fried veggies.
Friday – Fish Pie
I’ll be cooking up delicious homemade fish pie using the recipe from BBC Good Food
Saturday – Quesadillas

I’ll be making smoky sweet potato and corn quesadilla with avocado salad.
Sunday – Lasagne
Skipping the usual Sunday roast dinner and making a lasagne instead I’ll serve with salad and corn cobs.
