A week of easy, wholesome, tasty family dinners. Lot’s of warming, slowly cooked casseroles and stews this week it’s ‘back to school’ and I want things to be easy.
Monday – easy chicken curry
A ‘throw it all in a dish’ recipe. This chicken curry is cooked in the oven like a casserole. Easy and faff free, perfect for a busy weeknight.
Tuesday – potato scallop bake
A traditional northern dish, almost like a vegetable hotpot. Thinly sliced potatoes (you can add parsnips in here too) layered up with onions, herbs and Lancashire cheese. Pour over some vegetable stock and bake in the oven until the potatoes are tender. This always comes with lots of buttery bread.
Wednesday – french bread pizza
Quick and easy French bread pizza, these will be loaded up with ham, cheese and pineapple.
Thursday – slow cooker spicy beef stew
Easy slow cooker beef stew, spiced up with cumin, coriander and garam masala. Finished with a swirl of yogurt and served with naan bread.
Friday – roast veggies
A tray of chilli spiked roast vegetables – butternut squash, carrots, swede and onions alongside brown rice and a minty yogurt dip.
Saturday – garlicky lamb stew
Slow cooker lamb stew with tomatoes, chickpeas and butternut squash served with couscous tossed with apricots, lots of herbs and a sprinkling of feta cheese.
Sunday – toad in the hole
A huge tray of toad in the hole with mashed potatoes and rivers of onion gravy.
