Our Winter Slaw is a delicious jumble of winter veggies in a tangy, creamy dressing. Goes great alongside roast ham, pork pies and sausages rolls.

Adding a side of Winter coleslaw is a great way to eat fresh veggies during the colder months, and add a little colour to your plate.

Winter slaw is delicious piled onto buttery brioche rolls along with pulled ham or for eating alongside a burger or sausage roll.

Winter Slaw Ingredients

You’ll just need a handful of tasty ingredients to make our delicious coleslaw with fennel

  • 1/2 red cabbage – shredded
  • 2 carrots – peeled and chopped into matchsticks
  • 6 radish – thinly sliced
  • 1/2 fennel bulb – thinly sliced
  • 1 apple – peeled and sliced thinly
  • 40g walnuts – bashed into small pieces
  • 40g dried cranberries
  • 2 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

How To Make Winter Slaw

It is super easy to make our delicious winter coleslaw recipe

Step One – prepare all the vegetables – ready for the winter slaw

  • Shred the cabbage, peel and chop the carrots, slice the radishes and fennel, peel and slice the apple.
  • Place all the fruit and vegetables into a large mixing bowl with the Brocken walnuts and dried cranberries.

Step Two – mix up the coleslaw dressing

  • Mix together the mayonnaise, Greek yogurt and mustard in a small bowl.

Step Three – toss the winter slaw together in a bowl.

  • Add the coleslaw dressing to the bowl of fruit and vegetables and toss everything together – make sure all the ingredients are coated in dressing.

Step Four – serve the winter coleslaw

  • Tip the coleslaw into a serving bowl, you could sprinkle some chopped fresh dill over the top. And then serve alongside your favourite meal or as part of a Christmas buffet.

A delicious winter coleslaw recipe that's bursting with colour and flavour!

Ingredients

  • 1/2 red cabbage - shredded
  • 3 carrots - peeled and chopped into matchsticks
  • 6 radish - thinly sliced
  • 1/2 fennel bulb - finely sliced
  • 1 apple - peeled and finely sliced
  • 40g walnuts - broken into small pieces
  • 40g dried cranberries
  • 2 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • pinch salt
  • pinch black pepper

Instructions

  1. Shred the cabbage, peel and chop the carrots, slice the radishes and fennel, peel and slice the apple.

  4. Add the coleslaw dressing to the bowl of fruit and vegetables and toss everything together – make sure all the ingredients are coated in dressing.
