Monday – pesto tuna
Mix a can of tuna with a couple of teaspoonfuls of pesto, and some chopped black olives. Stuff your flatbreads with a handful of rocket leaves, then the tuna mix. If you wanted to go a step healthier then use tinned sardines instead of tuna.
Tuesday – pulled bbq brisket
Stuff your flatbread with delicious pulled bbq brisket and coleslaw. We like the coleslaw dressed with yogurt to keep the calories and fat content down. You can get the pulled bbq brisket recipe here.
Wednesday – roast veggies & halloumi
Stuff your flatbread with roast peppers, courgettes and onions and slide in a couple of slices of griddled halloumi. Let everything cool before you wrap it and pack it.
Thursday – pastrami, salad and dill pickle
Classic combination that tastes just so good. Add a handful of beetroot salad, some sliced pastrami and top with dill pickle and a little mustard mayonnaise.
Friday – hummus and watercress
Slather on a thick layer of hummus, go for a flavoured variety, add a handful of chopped olives and stuff in some watercress. Wrap and go.
