Meatball Pasta Bake

When you need a proper, filling family dinner, this meatball pasta bake delivers every single time - saucy, cheesy and completely satisfying.

This meatball pasta bake is one of those dinners. Juicy seasoned meatballs, pasta coated in tomato sauce, and a thick layer of bubbling golden cheese on top. It’s cosy, filling and completely family-approved.

Sometimes I make it fully from scratch. Sometimes I grab good shop-bought meatballs and a jar of sauce because life is busy and that’s fine too. This recipe works beautifully either way.

If you’re wondering what to make with meatballs, this is the answer.

Gently fry the onion and garlic in olive oil until soft.
Mix the mince, fried onion mixture, Parmesan, oregano, sun-dried tomato puree and egg in a bowl. Season well.

Roll into ping-pong sized balls. You’ll get around 16–18.

Warm the passata and chopped basil in a saucepan. Season to taste. Simmer gently.

Brown the meatballs in a frying pan for around 10 minutes, turning regularly.
They don’t need to be fully cooked yet — they’ll finish in the oven.

Cook according to packet instructions until just al dente. Drain.

  • Preheat oven to 200°C / 400°F / Gas 6
  • Stir ⅔ of the sauce through the drained pasta
  • Add the browned meatballs and mix gently
  • Tip into an ovenproof dish
  • Pour over remaining sauce
  • Scatter with cheese

Cook for 15–20 minutes until the cheese is melted, bubbling and golden and the meatballs are fully cooked through.

Scatter over fresh basil or parsley before serving.

Let it sit for 5 minutes before digging in.

      • Don’t overmix the meatballs – it makes them dense. Mix just until combined.
      • Salt your pasta water well – it seasons the whole dish.
      • Undercook pasta slightly – it continues cooking in the oven.
      • Rest before serving – helps everything settle and slice more neatly.

Fusilli and penne are classics because they hold sauce well. Rigatoni, conchiglie (shells) and farfalle also work beautifully. Avoid very thin pasta like spaghetti - it doesn’t hold up as well in bakes.

Once you’ve got the base, you can play.

      • Add sautéed peppers, mushrooms or courgettes
      • Stir in chilli flakes for heat
      • Add smoked paprika for depth
      • Use vegetarian meatballs
      • Swap cheddar for mozzarella for a stretchier top

This is one of those flexible dinners that happily adapts to what’s in your fridge.

      Keep it simple:

      • Fresh green salad
      • Steamed broccoli and peas
      • Garlic bread or baguette
      • Homemade coleslaw

It’s filling on its own, but a little greenery balances the richness nicely.

      • Fridge: Store covered for up to 2 days.
Freezer: Freeze in portions for up to 3 months.
      • Reheat: Cover and warm in the oven at 180°C until heated through, or microwave in short bursts, stirring halfway. Add a splash of water if it looks dry.

      • Batch cooking Sundays
      • Casual family gatherings
      • Busy midweek nights
      • Feeding hungry teenagers

      Can I use frozen meatballs?

Yes, just cook them straight as per the packet instructions before assembling the pasta bake.

      Can I make this ahead?

Absolutely. Assemble, cover and refrigerate for up to 24 hours before baking.

How do I stop meatballs going dry?

Don’t overcook them in the pan - they’ll finish cooking in the oven.

      Instructions

      1. Make the meatballs – gently fry the finely chopped onion and garlic in a little olive oil.
      2. Mix the minced beef and seasoning – in a bowl add the minced beef, fried onions and garlic, Parmesan cheese, dried oregano, sun dried tomato puree and the beaten egg. Season with salt and black pepper and mix well with your hands

      7. Preheat the oven to 200C / 400F / Gas Mark 6

      12. Cook the meatball pasta bake – put the meatballs pasta bake into the oven and cook for around 15-20 minutes or until the meatballs are cooked through properly and the cheese is all melted and bubbling on top.
      13. Scatter over the fresh herbs – simply scatter the torn basil over the top of the cooked meatball pasta bake
